Dairy-Free Chickpea Cookie Dough Bars

These 5-ingredient chickpea cookie dough bars are the PERFECT healthier, late night treat. 🤤 They curb your sweet tooth without being overly sweet or rich!

The cookie dough takes about 7 minutes to whip up and can be served immediately. You can either eat it with a spoon or use it as a dip with pretzels, graham crackers or apple slices. OR you can freeze the cookie dough into bars like I did. Prep time is still the same but you will need to let them freeze for at least a few hours before cutting a breaking apart.

These are also toddler-approved! My 15-month old LOVED them! I just tried to pick around the chocolate chips for her since the dairy-free ones are kind of hard and she doesn’t have a ton of teeth yet!
